PLUM PUDDING BALLS



INGREDIENTS

800g Homebrand dark fruitcake
½ cup Brandy, Rum or orange juice
100g melted butter
1 cup mixed fruit

ICING
100g white chocolate
1 tablespoon copha
red and green glace cherries, diced



METHOD

Process cake into crumbs. Mix in brandy, butter, and mixed fruit. Roll into walnut sized balls. Refrigerate for 30 minutes. Then ice.
ICING: Place milk chocolate in a heatproof, microwave safe bowl. Microwave on medium (50%) for 1 - 2 minutes, stirring every 30 seconds with a metal spoon, or until smooth. Spread or drizzle chocolate over balls and decorate with green and red cherries to represent Holly.
